Arturo Mora has been building a restaurant empire since opening a food truck seven years ago. He's now opening a fourth bricks-and-mortar spot, which will focus on chef-driven American food.

Some suburbs have all the luck! Consider Johnston—home of the Cajun-food drive-through, Cajun Belle and the homegrown fried-chicken-sandwich (and milkshake!) spot Charlotte’s Kitchen, as well as beloved, been-here-forever standby, Trostel’s Greenbriar. Just to name a few, of course.

And now, they’re getting another locally owned, one-of-a-kind restaurant: Roots 95 Craft Kitchen. According to owner Arturo Mora, the venue will be open sometime in February.

If you live in Johnston, Ankeny, or Bondurant, and you love Mexican fare, chances are you’ve had Mora’s food. He started with Flame the Food Truck seven years ago, then opened Flame the Taqueria in Johnston in 2021, then another Flame the Taqueria in Bondurant. In 2022, he made Ankeny very, very happy with Flame the Cantina, a full-service restaurant featuring an expanded menu and creative, handcrafted cocktails.
